Fritters, Pumpkin & Sweet Potato - by Taits Mom Empty Fritters, Pumpkin & Sweet Potato - by Taits Mom

Ingredients:500ml peeled pumpkin or sweet potatoe
125ml cake flour
5ml baking powder
2 eggs (beaten)


Method:
Steam the pumpkin/sweetpotato until soft
Mash and then mix in the remaining ingredients
Heat a little olive oil in a pan and drop spoonfuls in.
Fry until golden on both sides.
Sprinkle a little brown sugar and cinnamon on top (optional)
