Tuna Cakes - by 2TA
Tuna cakes:
1 tin tuna
some spring onion, chopped
about 3 or 4 tablespoons of steamed sweet potato
about 3 or 4 tablespoons of steamed butternut
some mixed herbs
2 slices of wholewheat brown bread (I just whizzed these up with my handstick blender to make breadcrumbs)
Mix all ingredients together, except the breadcrumbs. Form little bite-size patties and then coat in breadcrumbs. Fry in a bit of olive oil until golden brown.
Serve with a dipping sauce (I just mashed some avo, chopped tomatoes and a bit of cream cheese as a dipping sauce)
(I did find that they were a bit 'soft', but once they cooled down, they were fine)
Really tasty and so easy to make!
