Ingredients
300ml olive oil
3 onions, finely chopped
45ml crushed garlic
30ml dried parsley
3 pinches saffron
90ml Knorr Chicken Bouillon Granules
3 cups white wine or water
6 green peppers, sliced
3 red peppers, sliced
120ml Fish Spice
15ml Turmeric
750ml Knorr Tomato Pronto
15ml sugar
12 cups white rice
18 cups water
3kg Seafood Mix



Method
Heat olive oil in pan, add onions, garlic & Parsley and sauté for 1 minute (do not brown onion mix)
Add saffron, chicken Bouillon Granules, water or wine and red and green peppers. Allow to simmer for 1 minute
Add fish spice, turmeric, sugar and Knorr Tomato Pronto. Stir through
Add rice and rest of the water and bring to the boil and allow to simmer on a low heat with the lid on for 10 minutes
Add the seafood mix. Simmer for 10 minutes, with the lid on, stirring occasionally. Allow to simmer for a further 10 minutes, stirring occasionally
Add more water if rice is too dry
Serve garnished with fresh sprigs of coriander


Serves: 25 portions
Preparation time: 30 minutes
