Carrot & Banana Cake - by Petro
Ingredients
4 eggs
500ml sugar
250ml cooking oil
625ml self raising flour
5ml bicarb of soda
5ml fine cinnamon
1ml salt
500ml roughly grated carrots
250ml finely squashed bananas
1 packet Sprinkle Nuts (optional)
Method
Preheat oven to 180°C
Beat egg and sugar until creamy
Add cooking oil and beat well
Sieve Self Raising flour, bicarb of soda, cinnamon and salt together
Mix dry ingredients into egg mixture
Add carrots, bananas and nuts (if using) and mix well
Pour mixture into either 2 x greased round cake tins or 1 spiral cake tin
Bake for 45 – 60 minutes at 180°C
ICING SUGAR
Ingredients
100ml soft margarine
200ml smooth cottage cheese OR cream cheese
2ml vanilla essence
700ml icing sugar - sieved
125ml chopped walnuts
Method
Blend margarine and icing sugar well
Add cream cheese / cottage cheese and vanilla essence and beat until smooth
Ice cake as desired
Sprinkle nuts over iced cake and place in fridge to set
