Ingredients:
Readymade puff pastry (I use the Today pastry which comes in a blue and white packet)
1 x pack of Bacon – diced and cooked (I usually cook this in the microwave for about 6 minutes)
About 1 ½ cups diced Butternut
About 15 - 20 Cherry Tomatoes – halved
Round of feta cheese
3 eggs
250ml plain yoghurt
About a cup of grated cheese

Method:
1. Set oven at 180 deg and roll out pastry and place in a greased quiche dish
2. Sprinkle bacon over the bottom of the dish evenly
3. Steam butternut for about 15 minutes and then place on a baking tray. Drizzle olive oil over the top and season with Ina Paarmen garlic and herb. Roast for about 15 minutes or until it looks ready
4. 10 minutes before the end of the butternut, add the halved cherry tomatoes to the baking tray. Bake for 10 minutes.
5. Sprinkle butternut and cherry tomatoes over the bacon (again, evenly)
6. Break up the feta over the top
7. In a jug, beat the eggs and yoghurt together and add grated cheese. Season with salt and pepper
8. Pour this mixture over the quiche dish and bake in the oven for about an hour and 15 minutes or until the top is golden brown

You can use any ingredients really as a filling... other good combinations are spinach, feta and bacon or sundried tomato, butternut, broccoli and feta etc...
