Chocolate Brownies (CPT Christmas party recipe) - by Mila
Chocolate Brownies
Makes: 16 squares
They should be fudgy when cooked but not runny at all
Ingredients
140g butter
200g dark chocolate broken up into pieces
225g sugar
2 teaspoons vanilla EXTRACT
2 large eggs beaten, at room temperature
1 large egg yolk beaten, at room temperature
85g flour
Method
Preheat oven to 180 degrees C
line a 20cm square tin with baking parchment
In a large bowl set over (not in) a pan of simmering water, melt the butter and chocolate
Remove the bowl from the heat and allow to cool slightly
Stir in the sugar and vanilla. (the mixture becomes grainy but dont worry)
Whisk in the beaten eggs and extra yolk until well mixed
Sift in the flour, beat the mixture for about a minute until thick and smooth
Pour the mixture into the prepared ti and bake for 35-45 minutes or until a knife inserted into the middle comes out with moist crumbs (not wet batter) clinging to it (be careful- it over cooks really quickly)
Allow to cool in the tin, then cut into squares with a sharp knife.
