Couscous, Roasted Veg - by 2TA Empty Couscous, Roasted Veg - by 2TA

Ingredients
Couscous (cook according to box instructions)
1 small red pepper, cubed
1 small yellow pepper, cubed
2 large baby marrows (peeled with a potato peeler)
15 or so cherry tomatoes, halved
generous portion of spinach leaves, sliced
handful of chopped fresh basil
3 Tblsp basil pesto
1 round feta (I find the danish one to be the best)
8 - 10 sundried tomatoes, sliced
Salt and Pepper to taste

Method
1. cook couscous according to box instructions
2. set oven at 180 deg, drizzle olive oil over peppers and baby marrows and bake for about 30 minutes (or until done)
3. 10 minutes before the veg are cooked, add cherry tomatoes
4. Put the cooked couscous in a salad bowl/platter and sprinkle with spinach, basil, sundried tomatoes and feta
5. mix in basil pesto and salt and pepper to taste
6. once veg are cooked, add to the couscous and drizzle some olive oil over the top and mix all together

serve cold :)
