Malva Pudding - by 2TA
Ingredients
250ml Sugar
1 Jumbo Egg
15ml Softened Butter
60ml Smooth Apricot Jam
250ml Cake Flour
5ml Bicarbonate of Soda
1ml Salt
250ml Milk
10ml Vinegar
10ml Vanilla Essence
Sauce
250ml Cream
100g Unsalted Butter
125ml Sugar
60ml Hot Water
Method
Preheat oven to 180°c. Beat sugar, egg, butter and jam until pale and fluffy. Sift flour, bicarb and salt into a bowl. Mix milk, vinegar & vanilla essence together in a separate bowl. Fold four mixture & milk mixture alternately into egg mixture. Pour into a buttered 22-24 cm diameter baking dish. Cover with foil, shiny side down and bake for 45 – 55 mins until firm, or until a skewer inserted in the centre comes out clean. Remove foil 10 mins before end of baking time to allow pudding to brown on top.
SAUCE: Combine ingredients in a saucepan. Heat, stirring until butter melts and sugar has dissolved. Pour over hot pudding.
