Cookies, cheese & jam - by Essie
Ingredients:
275g / 500ml cake flour
2ml salt
1ml baking powder
250g / 625ml finely grated cheddar cheese
250g margarine - at room temperature
60ml smooth apricot jam
Method:
Sift flour, salt and baking powder
Add cheese
Add margarine and mix till a batter is formed
Roll into little balls and press a small hole in the middle
Put apricot jam into little holes
Bake for 15 minutes at 200 degrees C.
It's messy, and makes ALOT of little cookies. So you can halve the ingredients if you want, or even quarter it. But it's real tasty!
