Soetkoekies
4 cups coconut
3 cups butter
4 cups sugar
10 cups flour
12 tsps baking powder
12 eggs
vanilla essence
Method
Use BIG mixing bowl.
Mix flour, sugar, baking powder, salt and coconut together.
Mix thoroughly.
Rub in butter until it looks like fine mieliemeal.
Mix in beaten eggs and vanilla essence.
Pour in some milk just to moisten a bit.
Make small balls and place on greased pan.
Bake in medium heat over of 180 degree until golden brown (approx. 20min)
This makes a huge amount so obviously adjust to how much you want.... I usually half or quarter it.
