500g Chicken Breasts - deboned and skinless (cut into strips)
1 x Onion - chopped
1 x tsp Crushed Garlic
1 pkt Mushrooms - chopped
1 each Green/Red and Yellow Pepper - chopped
1 Tin of Sweetcorn
1 pkt Pasta (fucili (sp) is my favourite)
1 Tub Fresh Cream
1 Tub Sour Cream
Lots of Grated Cheese

Boil pasta as normal and set aside. Fry up chicken strips till golden brown and set aside. Fry onion and garlic till translucent, add mushrooms and peppers and fry till tender, add sweetcorn and fry for about 2-3 minutes.

Mix everything together (you can add some of the cheese), add sour cream and fresh cream and mix. Place in an oven proof dish and top with cheese. Bake for 30 minutes or until cheese is golden brown.

Serve with Salad.

This is something i discovered years ago and it is still a hit.....never ever leftovers.
