Banana Bread - by Essie
Ingredients:
500 ml (2 cups) flour
250 ml (1 cup) sugar
120 g butter/margarine
2 eggs
3 big and ripe bananas, mashed up with a fork
65 ml water
7 ml (1.5 tsp) baking powder
5 ml (1 tsp) bicarbonate of soda
Pinch of salt
Method:
1. Cream the butter/margarine and sugar in a bowl until fluffy and creamy
2. Mix mashed-up bananas into butter-mixture and mix well
3. Mix the eggs one by one into the mixture and mix well
4. Sift the flour and salt into the mixture and mix well
5. Dissolve the bicarbonate of soda into the water and mix into the mixture, then mix the baking powder in.
6. Pour the mixture into a well-coated/sprayed breadpan and bake for 45 minutes at 180 degrees C.
7. Let it cool down for a few minutes in the pan, and then turn it out onto a cooling rack.
