Veggies, Roasted Mediterranean - by Petro
Ingredients
2kg courgetts, obliquely cut
750g red onions, quartered
1,5kg butternut, cubed
100ml olive oil
100ml Robertson's Veggie Seasoning
1.5 litre Knorr Blue Cheese Salad Dressing or Knorr Creamy Ranch Salad Dressing
Method
Mix the vegetables iwth Veggie Seasoning and the olive oil and roast until soft.
Cool the vegetables slightly and toss with Blue Cheese Salad Dressing or Creamy Ranch Salad Dressing
Serve as a Side Salad, or in a wrap for a tasty lunch.
SERVES: 5 x 120g portions
Preparation Time: 20 minutes
Cooking / Setting Time: 30 minutes
