Thai Noodle Salad - by Petro
Ingredients
10 tablespoons fresh ginger, finely chopped
10 tablespoons fresh garlic, crushed
10 tablespoons Sweet Chilli Sauce
625ml Knorr Honey & Soy SAuce
5 tablespoons Sesame Oil
2.5kg prawns, cleaned, deveined, butterflied
2.5kg egg noodles, cooked
500ml Honey & Mustard Salad Dressing
25 spring onions, thinly sliced, diagonally
10 tablespoons fresh coriander, chopped
5 red peppers, dieced
500g mange tout, halved, diagonally
10 teaspoons Robertson's Exotic Thai Seasoning
5 limes, juice squeezed
Method
Place prawns and Honey & Mustard Salad Dressing in a bowl and leave to marinate for 10 minutes
Mix together giner, garlic, Honey & Soy Sauce, Sweet Chilli Sauce, Sesame Oil, Lime Juice & Exotic Thai Seasoning.
Mix well with a whisk.
Pour dressing over cooked egg noodles. Add diced pepper, mange tout, spring onion and chopped coriander.Toss well to mix all ingredients together.
In a hot pan add ooil and quickly fry prawns over high heat. Take care not to overcook.
Arrange noodle salad in centre of plate or serving bowl and arrange cooked prawns on top.
Prawns and noodles can be served hot or cold as desired.
