The oriental mix of coriander, ginger and lemon grass with basmati rice makes this aromatic meal a must for entertaining.

Serves 4 | Preparation Time: 20 mins | Cooking Time: 45 mins

1 litre water
2 cm piece ginger
250 ml basmati rice
1 yellow or orange pepper
125 ml coriander leaves
15 cm piece fresh lemon grass
600 g chicken breasts
1 sachet Knorr Spice Up Your Rice – Exotic Thai
200 g mange-tout, blanched
150 g mixed salad leaves
125 ml Knorr Citrus Splash Salad Dressing

Bring the water to the boil

Add lemon grass and ginger

Poach the chicken for 8–10 min or until cooked through

Cool the chicken in the liquid

Strain and reserve cooking liquid

Slice cooled chicken thinly

Measure 800 ml of reserved liquid, filling to the 800 ml mark with water if necessary

Pour the liquid, Spice Up Your Rice sachet contents and basmati rice into a pot, bring to the boil, then simmer for 10–15 min or until cooked

Place chicken, rice, mange-tout, yellow pepper, salad leaves, coriander and Knorr Salad Dressing in a large bowl

Toss gently to combine
