Malva Pudding - by Petro Empty Malva Pudding - by Petro

15ml butter / margarine
250ml castor sugar
1 egg
5ml apricot jam
5ml bicarbonate of soda
250ml cake flour
250ml milk
250ml cream
125g butter / margarine
250ml sugar
125ml boiling water


Pre-heat oven to 180°C
Cream butter, sugar and egg until light yellow in colour
Mix jam & bicarb of soda into egg mixture
Stir cake flour and milk into butter mixture and stir well
Pour mixture into a greased ovenproof container
Bake for 45 minutes

Place all ingredients into a saucepan and heat until boiling point
Boil for a further 2 minutes
Pour sauce over baked pudding when removed from oven
Return pudding to oven for a further 5 minutes
Serve warm with custard, cream or ice cream
