Fish skewers, sweet & spicy - by Lize_U

500g fish fillet of your choice,cut into 12 pieces
2 garlic cloves
1x piece of fresh ginger.Like a 5cm piece
1/2 a stalk of fresh lemon grass
1 red chillie
juice of 1 lime
1/2 cup soya sauce
3 tbsp olive oil
fresh mint
fresh coriander
1 cucumber, cut lengthways into thin ribbons
1 large mango,sliced thinly

Thread fish into bamboo skewers.Bash garlic,ginger,lemon grass and chilli in a pstle and mortar.Add olive oil and soya.Brush some of the mix over the fish and grill for a few min under grill.Place on a platter and add the mint,coriander,cucumber and mango.Dress with rest of the mix and serve with hot naan bread.


This bread is always a winner

Health Bread

230g Nuttiwheat
130g crushed wheat
100g cake flour
15g honey
5ml salt
500ml buttermilk
60g sunflower seeds

200C oven.Grease a loaf ti well.Mix everything together but keep out some sunflower seeds to sprinkle on top of loaf.Bake for 45min or untill bread sounds hollow underneath



Tzatziki(cucumber dip)

1 med cucumber,peeled and coarsely grated
500ml greek style thick natural yoghurt
10ml olive oil
5ml white wine vinegar
pinch salt
2 cloves garlic crushed

Squeeze all excess moisture from the cucumber.Mix all the other ingrediants together and place in fridge for atleast one hour before serving


This is my all time fav chicken rescipe

Roasted ginger-and-lime chicken

Serves 4

4 chichen legs or an 8 piece mix of thighs and drumsticks
1kg sweet patato,cubed
salt and freshly ground black pepper
2 tbsp ginger crushed
4 cloves garlic crushed
1 red chilli chopped
1/3 cup honey
1/3 cup lime juice
4 tbsp butter

Add everything in a roasting tin in the oven for 30min at 200C

serve with steamed broccoli or a green salad
