Turkey (Roast) with Macadamia Butter - by Petro

Ingredients


1 x 6kg turkey
250ml water
oil

Macadamia Butter

100g macadamia nuts
2 tsp oil
150g softened butter
2 cloves garlic, crushed
2tbsp chopped fresh parsley

Bacon, Mushroom, and Rosemary Stuffing

8 rashes fatty streaky bacon
2 onions, chopped
250g mushrooms, sliced
2 tbsp chopped fresh rosemary
4 sticks celery, chopped
250g fresh breadcrumbs
salt & freshly ground black pepper


Method

Remove neck & giblets from turkey
Rinse with cold water and pat dry inside and out
Very carefully loosen skin over breast and tops of legs, using fingers, without tearing the skin

To make the macadamia butter, roast the nuts in oil in a frying pan on the hob.
Stir constantly, watching carefully, as nuts burn very quickly.
Combine nuts, butter, garlic and parsley in a food processor and process until smooth.
Chill until firm.
Push butter under loosened skin, again taking care not to break the skin.

To prepare the stuffing, cook bacon in pan until crisp.
Remove and cut into small pieces.
Add onions, mushrooms, rosemary and celery to pan and fry in bacon fat for a few minutes - add more oil if needed.
Remove from heat.
Stir in crumbs, bacon and seasoning.

Allow stuffing to cool completely before filling the turkey cavity just before roasting.
Place in roasting tin and add water.
Brush evenly with oil.
Bake in a pre-heated oven at 180°C for 30 minutes, then reduce temperature to 160°C and roast for approximately 3½ hours.
After 1 hour, cover turkey with foil so skin does not darken too much.
Turkey is ready when it is golden brown and the juices run clear when pierced in the drumstick joint with a fork.
Serve with gravy, roast potatoes, and vegetables.

Serves 6 - 8


TIP: To truss a turkey, place turkey breast-side up.
Neatly bring legs close to breast and tuck wings in.
Cut a long piece of butcher's string.
Take string across neck end of the breast, over wings, and cross string beneath turkey.
Bring string up and back over legs, and then tie the drumsticks and paroson's note together.
