Fudge - by Essie Empty Fudge - by Essie

800 g Sugar (I only use 750g, otherwise it's too sweet)
250 g Butter or Margarine
250 ml Milk
250 ml Condensed milk (I use the whole can)
10 ml Vanilla essence

Boil the sugar, margarine and milk over medium heat. Mix continuously until sugar is dissolved.
Pour condensed milk in and cook for 40 minutes. Mix continuously. Turn heat down a bit if it crystalises.
When mixture becomes thick and dark creamy (even if the 40 minutes isn't done), take it off the heat and add the vanilla. Mix well until it's very thick.
Throw in a thin, sprayed pan and let cool before cutting.
