Chicken & Rice Salad - by 2TA Empty Chicken & Rice Salad - by 2TA

1 pack of chicken pieces (I use the breasts on the bone)
1 onion
1 bay leaf
1 carrot
1 can (350g) pineapple rings
250ml Mayonnaise
10ml soy sauce
1 tsp ground ginger

50ml oil
25ml lemon juice
15ml honey
750ml hot cooked brown rice
2 sticks celery, chopped
1 leek
50ml parsley, chopped
spring onions
250ml sprouts (optional)
250ml peeled and cubed cucumber
salt and pepper
toasted almonds

1. Put the chicken pieces into a pot and fill with enough water to cover. Add the onion cut in half, the bay leaf, parsley and carrot.
2. Bring the water to a boil and then bring the temperature right down, poaching the chicken. Cool the chicken in the liquid.
3. Remove the flesh from the bone and dice.
4. Drain pineapple and keep the juice. Chope 3/4 rings and add to the chicken.
5. Mix the mayo, soy sauce and the ginger, adding some pineapple juice to taste.
6. Toss this dressing with the chicken and pineapple pieces. Cover and chill.
7. Mix the oil, lemon juice and honey. Fork into hot rice.
8. Add the celery, leek, parsley, spring onions, sprouts, cucumber and salt and pepper. Cover and chill.

Border rice and set the chicken in the middle. Sprinkle the toasted almonds on the top...
